When you have one of those weeknights where takeout seems like the only option, think again. If you have veggies and salmon on hand, you can prepare this delicious lemon pepper salmon dish from Giada De Laurentiis that only requires one pan and 15 minutes of your time.
“The most elite weeknight dinners only require one pan and have all your protein and veggies in one go, and this sheet pan lemon pepper salmon is exactly that,” the caption of a recent Giadzy post reads.
To make De Laurentiis’ Sheet Pan Lemon Pepper Salmon and Veggies, scatter your sliced zucchini, potatoes, and cherry tomatoes onto the sheet pan and drizzle them with olive oil. De Laurentiis likes to use a pepper-infused oil like Gargiulo, but regular extra-virgin olive oil will do the trick. You can also swap in or out veggies of your choosing — bell peppers would be a good swap for the potatoes if you’re looking to lighten up the dish a bit.
Season your veggies with salt and toss the pan into the oven to allow everything to start roasting. Your potatoes should be tender and your veggies brown before you add the salmon (this will take about 20 minutes).
While your veggies are roasting, combine olive oil, lemon zest, black pepper, and oregano in a small bowl. Pat dry your salmon steaks and season with salt before rubbing the fillets with the lemon pepper dressing. When you pull your veggies out of the oven, nestle the salmon onto the pan, on top of the veggies, and pop the entire thing back in for another 10 to 15 minutes, or until the salmon is done to your liking.
